RINSE rice with water until it runs clean, drain it and reserve.
HEAT a pot over medium heat. Add rice and cook until it begins to get brown, move with a wooden spatula so it doesn´t stick.
ADD onion and garlic, continue frying until onion and garlic turn borwn. Cook for 3 more minutes and add the water and chicken soup. COVER the pot and let it boil for 10 minutes.
REDUCE heat, add parsley and mushrooms. Let it boil for 15 more minutes. When rice is completely cooked and liquid consumed, take away from heat.
