1 ½ cup Pinto beans Verde Valle®

1 tablespoon salt

1 kg. pork ribs

4 tablespoons oil

1 onion, finely chopped

2 garlic cloves, finely chopped

2 tablespoons chilli flakes

1 teaspoon oregano

1 teaspoon cumin powder

½ cup coriander, finely chopped

Salt and pepper

PREPARATION

ADD enough water in a press cooker. Add beans and a tablespoon of salt. Cover the pot and cook over medium heat for 40 minutes or until they get completely cooked and soft. SEASON the pork ribs. Heat oil in a pan, fry onion and garlic, add the ribs and fry until they turn brown. WHEN beans are ready, let them cool and open the press cooker. Add the meat, season with salt, chilli flakes, oregano and cumin. LET it cook for 15 more minutes over medium fire with the press cooker open. SERVE hot and sprinkle coriander on each plate.
